Apple-Dried Cherry Cookies
(from Joann Rennhack)
These cookies will be cakelike after a day or two. They stay moist because of the apples. Unbleached flour can be used instead of whole wheat flour.
Cream together: 1 cup butter-flavored Crisco
1 1/2 cups brown sugar
Add and mix well:
2 eggs
1/4 cup skim milk
2 teaspoons vanilla
Stir together, add to above; mix well:
2 cups whole wheat flour
dash of salt
2 teaspoons cinnamon
1 1/2 teaspoons baking soda
Stir in:
1 1/2 to 2 cups of dried cherries
2 cups chopped apples
Add; mix well:
3 cups quick oats
Drop by rounded teaspoons on cookie sheet that has been sprayed with nonstick vegetable oil spray. Bake at 350 degrees F for 9 to 11 minutes, until lightly browned. Remove to cooling rack. Store in airtight container.
